1 1/2 cups flour 1tsp sugar 2tsp baking powder 1/2 cup cornmeal 1/2 cup frozen corn kernels (or canned) 2 eggs 1/2 cup oil or melted butter Parsley dried or fresh 3-4 sundried tomatoes finely diced Bake at 350 for 15-20 minutes or in a loaf pan for 35 minutes (Variation. In a small pot Place 1/4 cup sugar or sweeter. And 2 cups of frozen mixed berries and a splash or orange juice . Boil and reduce down on med heat. BANNOCK 2 -3 cups of all purpose flour as needed 2 packets Dr oteker baking powder Pinch of salt 1 tablespoon sugar 1/2 cup butter room temperature 1 cup milk Mix dry ingredients, add in wet. Form a dough do not over mix! In a 350 degree oven on a overy generously buttered pan bake for 35 minutes. Or pan fry. In oil at 375 degree until golden brown. ( oil should be half way up the sides of the dough . Serve with warm freezer jam Or as a side to soups
Spaghetti and beans with fresh tomato garlic artichoke sauce

Quick and easy veggie lunch! In a large pot full of salted water add two handfuls of spaghetti and half a can of kidney beans (white or red) In another small pot bring 1/3 cup of Olive oil handful of fresh herbs (basil, oregano etc), a pinch of crushed red chili flakes,1small jar undrained artichoke hearts, and 2 garlic cloves minced add 1-2 large diced tomatoes , cook on med until pastas done drain and mix together.

This stew can be done in a crock pot all day on low as the okra will expand or on the stove top quick in 40 minutes. 1 buttercup squash diced 1/2 onion diced 1 tsp ginger grated 1/2 cup green garlic 2 bouillon cubes (go bio vegetable is the best ) 1 1/2 cups fresh or frozen okra 2 tsp coriander 2 tsp tumeric (for color) salt pepper to taste
