vegan stew
This stew can be done in a crock pot all day on low as the okra will expand or on the stove top quick in 40 minutes.
1 buttercup squash diced
1/2 onion diced
1 tsp ginger grated
1/2 cup green garlic
2 bouillon cubes (go bio vegetable is the best )
1 1/2 cups fresh or frozen okra
2 tsp coriander
2 tsp tumeric (for color)
salt pepper to taste
