revamped for company 1 sweet potato grated skin on 1-2 eggs beaten 1tsp mrs dash spice blend Salt and pepper Handful of fresh garlic or chives approx 1/4 cup 2tbsp flour any kind (chickpea or cornmeal work well) Mix all ingredients and in a hot pan coat bottom with cooking oil turn down on med heat cook until golden with lid partially covered , the trick is to only flip once. You can use a dinner plate for this. Top with sour cream and grated cheddar

1 1/2 cups flour 1tsp sugar 2tsp baking powder 1/2 cup cornmeal 1/2 cup frozen corn kernels (or canned) 2 eggs 1/2 cup oil or melted butter Parsley dried or fresh 3-4 sundried tomatoes finely diced Bake at 350 for 15-20 minutes or in a loaf pan for 35 minutes (Variation. Add jalapeños and grated cheddar on top)
Bannock and mixed berry freezer jam

In a small pot Place 1/4 cup sugar or sweeter. And 2 cups of frozen mixed berries and a splash or orange juice . Boil and reduce down on med heat. BANNOCK 2 -3 cups of all purpose flour as needed 2 packets Dr oteker baking powder Pinch of salt 1 tablespoon sugar 1/2 cup butter room temperature 1 cup milk Mix dry ingredients, add in wet. Form a dough do not over mix! In a 350 degree oven on a overy generously buttered pan bake for 35 minutes. Or pan fry. In oil at 375 degree until golden brown. ( oil should be half way up the sides of the dough . Serve with warm freezer jam Or as a side to soups
