Rosemary marmalade with mandarins

Rosemary Mandarin marmalade In. Blender  add 5-7 Mandarin oranges with peel blend semi roughly In a small pot on medium heat add remaining ingredients except cornstarch bring to boil and reduce heat (20min) total cooking time    5-7 mandarins   Grate1 tsp fresh ginger  1 cup sugar 1 sprig fresh rosemary chopped roughly 1/2 sprig fresh thyme leaves 1 tsp butter (Can add 1/2 seeded lemon to blender for tartness) 2tsp cornstarch with a tiny amount of lemon juice or orange juice to make a slurry to thicken

In a muffin tin   Use a  cup or cookie cutter and  cut out 6-12 rounds of bread  depends on pan size..place in bottom of muffin tin.    Ring bacon around the edges and crack an egg into centre.    Or hollow out part of Avacador halve and crack eggs (can be beaten) or  if on a diet use the egg whites    Bake @ 400 for 15 -20 minutes
