Spaghetti and beans with fresh tomato garlic artichoke sauce

Quick and easy veggie lunch! In a large pot  full of salted water add two handfuls of spaghetti and half a can of kidney beans (white or red)  In another small pot  bring  1/3 cup of Olive oil handful of fresh herbs (basil, oregano etc), a pinch of crushed red chili flakes,1small jar undrained artichoke hearts, and 2 garlic cloves minced add 1-2 large diced tomatoes , cook on med until pastas done drain  and mix together.

vegan stew

This stew can be done in a crock pot all day on low as the okra will expand or on the stove top quick in 40 minutes. 1 buttercup squash diced 1/2 onion diced 1 tsp ginger grated  1/2 cup green garlic 2 bouillon cubes (go bio vegetable is the best ) 1 1/2 cups fresh or frozen okra 2 tsp coriander 2 tsp tumeric (for color) salt pepper to taste

Easy weeknight  dinner Ready in 15 minutes and  only  3 ingredients 2 packages of cresent  rolls (pilsbury) bake 10 minutes....  then add 1 tub  veggie or herb n garlic creamcheese... bake until melted. ..  top with : 1 cup broccoli  slaw mix (or fresh sliced veggies)    ****bacon bits optional****

only 3 ingredients.... halved avacados beaten eggs, 1 per 2 halves shredded  cheese for the top some  variations  include   sliced turkey,  ham or  add in fresh herbs  to beaten eggs Slightly hollow out  avacados fillen with sliced turkey or  (no meat veggie option can use vegan cheese if you want )fresh herbs and beaten eggs top with shredded  cheese . Bake at 425° for 15 minutes  covered and 5 minutes to brown the tops. .

treat yourself to a coldplate for me time.......sundried tomato havarti,genoa salami, shredded carrots, tomatoes, triscuits , and artichoke asiago dip.... damn i cant  take a photograph   grr

1 small package of vermacelli , cooled 1cup each carrots,  cucumber,  redpepper julienned 1 avacado sliced  thinly ****vinegarette*** 2tsp sesame oil 2tsp soya sauce 2tsp oyster or fish sauce 3tbs sweet  chili sauce 3 tbs rice wine vinegar **** toppings*** sliced cooled shrimp dried salted kelp sesame seeds
